Rosa Mexicano Now Open at the Walt Disney World Swan and Dolphin Resort

We were invited to the ribbon cutting for Rosa Mexicano, which is now open at the Walt Disney World Swan & Dolphin Resort. The upscale Mexican restaurant is located on the lower level of the Dolphin. Jeff attended for us, with the ribbon cutting taking place near a portrait of Mexican artist Frida Kahlo. The media group was also invited to sample some food and drinks.

Rosa Mexicano is located where former Fresh Mediterranean Market was, and the location has been completely remodeled. One thing to note about Rosa Mexicano – the restaurant serves breakfast, lunch and dinner. The current hours are 6:30 a.m. – 11: 00 p.m., which is great for early risers or a late night dinner.

Rosa Mexicano was founded in 1984 by founding chef Josefina Howard, with the flagship location being in New York City. There are now ten locations, with the newest here at Walt Disney World. CEO Gregory Sherman said, “I just want to say for us, it’s really magical to bring a 40-year old iconic restaurant to a place that really, truly makes dreams come true.”

Rosa Mexicano seats up to 189 guests, including a 40-person bar and a private dining room for 50 in the 5500-square foot restaurant. The words “bold” and “vibrant” are used a lot with the restaurant, which can be used either for the decor or the food.

Sean Verney, General Manager at the Walt Disney World Swan and Dolphin Hotel and Dolphin stated, “We believe this is a great addition to the 23 restaurants and bars that we already have at this fantastic resort”.

Dan Herman, Executive Chef at the Walt Disney World Swan and Dolphin talked about the restaurant concept. “Rosa Mexicano is a concept that is up and down the East coast. Chef Manuel and the Rosa team really exposed us to authentic Mexican cuisine.” He talked about how it has been a great learning experience, making the sauces, and “the use of some pretty simple ingredients to make some pretty magical food”. Herman was asked about the food, and he said they have eight different chiles, along with four or five imported cheeses from Mexico. He continued, “I have to tell you, one of the most impressive things for me is that we make all of our own tortillas from scratch for all of the tacos here.”

We previously sampled tastes of Rosa Mexicano at Walt Disney World Swan and Dolphin events – but not to the extent that Jeff did on Thursday. He was very impressed with the food, which certainly photographs as well as it tastes.

Rosa Mexicano features a signature tableside guacamole presentation and award-winning margaritas.  In addition, there is a Ribeye, Roasted Chicken, Enchiladas and more.
