CELEBRATION, Fla. (April 11, 2022) — New York-based restaurant group, In Good Company Hospitality (IGC Hospitality), in partnership with the Meliá Orlando Celebration, is pleased to announce the July 2022 opening of The Wilson Cocktails & Seafood, located at 225 Celebration Place in Celebration. This location will be the hotel’s signature restaurant, and the second for the Wilson brand, and will be open for breakfast, lunch and dinner, with happy hour and weekend brunch service to follow.

The Wilson Cocktails & Seafood features a menu of coastal cuisine with global influences and seasonally inspired cocktails. The quirky, unconventional seaside-inspired bistro is a perfect spot for a lively happy hour with colleagues, an easy-going brunch with friends, or a relaxing dinner after a long day of hitting the Orlando-area theme parks. The hotel is located just seven minutes from Walt Disney World (via Osceola Pkwy) and 19 minutes away from Universal Orlando Resort (via I-4).

Designed by Dallago Associates Hospitality Designers, The Wilson’s 70-seat indoor dining room — with an additional 20 seats at the bar —welcomes travelers and locals to sit down, relax, enjoy a cocktail, and dive into some of the most delicious dishes in Orlando. The outside patio seats 70 as well, with an additional 16 seats at a whimsical open-air bar called Wilson’s Garden, where brightly colored umbrellas seemingly float under Central Florida’s blue skies. The restaurant will also service the pool area, where guests can enjoy fresh food and beverages from any of the 120 poolside loungers.
Meliá Orlando Celebration and The Wilson invite events of all sizes to the hotel, and the restaurant will feature 2,650 square feet of event space upstairs, including a covered outdoor terrace strung with romantic market lighting.
The relationship between IGC Hospitality and Meliá Hotels began in 2018 at INNSIDE by Meliá New York NoMad, where IGC Hospitality debuted The Wilson as the hotel’s signature restaurant. The dining destination is now a popular location with both guests of the hotel and New York City locals.

Florida’s plethora of fresh and high-quality seafood, bounty of produce and incredible hospitality talent made this location a no-brainer for us when it came to picking an expansion city for The Wilson concept.”

The menus at The Wilson showcase a selection of fresh crudo from the raw bar, including shucked oysters and clams. Starters include options like original favorite Brussels Sprout Tacos with Thai chili, pepper jam and caramelized yogurt sauce, a Shaved Broccoli Caesar salad, and Charred Octopus with baby potatoes in a romesco and green olive gremolata. For main dishes, the kitchen presents options like Brick Chicken with lemon and cherry peppers, a Double Patty Burger with American cheese, bread and butter pickles and black pepper mayo, served with either fries or salad, and a Lobster BLT served on buttered brioche with tarragon mayo.

The beverage program at The Wilson features craft cocktails that rotate and change seasonally, prepared with artisan syrups, bitters and garnishes with top-shelf liqueurs and spirits. A selection of craft beers, including several options from Central Florida breweries, are also available alongside a handful of creative mocktails and expertly selected wines both by the glass and by the bottle.

IGC Hospitality will also open Park Avenue Tavern on Park Avenue in Winter Park, Fla., in tandem with the opening of The Wilson at Meliá Orlando Celebration.
